Grilled Vegetable Sandwich

Makes: 4 Sandwiches

Ingredients: 

  • 8 slices of Brown bread 
For The Stuffing
  • 3/4 cup onion
  • 3/4 cup shredded cabbage
  • 3/4 cup grated carrot
  • 3/4 cup finely chopped bell pepper/capsicum(optional)
  • 3/4 cup grated low fat paneer (cottage cheese)
  • 1 green chilli, chopped(optional)
  • 4 tablespoon mozzarella cheese
  • Salt to taste
  • 1 tablespoon low fat butter for cooking/greasing (optional)

Method:

  1. Mix all the ingredients Except Bread slices together.
  2. Divide the stuffing into 4 equal portions.
  3. Place one portion of the stuffing on one slice of bread. Top with another slice of bread.
  4. Repeat with the remaining ingredients to make 3 more sandwiches.
  5. Pre-heat the griller and grill the sandwiches, using a little low fat butter to cook.
  6. Halve the sandwiches and serve immediately.
  7. Serve hot.
