Lauki Ki Kheer/Dudhi Ki Kheer

Lauki ki kheer-It is a delicious  Indian dessert made from Bottle gourd. 
Lauki ki Kheer is one of the very tasty, easy to digest and refreshing Indian dessert.
I have just cooked the grated lauki (bottle gourd) in milk and not added any khoya but you can also prepare Lauki Kheer with khoya/Mawa too.

You can prepare Lauki ki kheer using any of these two methods.


Doodhi/Lauki Ki Kheer Recipe

Lauki Ki Kheer/Dudhi Ki Kheer



Main Ingredients: Milk, Condensed milk and bottle gourd 
Recipe Type: Desserts and sweets

Ingredients:

  • 2 cups grated bottle gourd (Doodhi / Lauki)
  • 500 ml milk
  • 1 tablespoon clarified butter (ghee)
  • Sugar to taste
  • ½ cup condensed milk
  • 4 tablespoons desiccated coconut (nariyal bura)
  • 1/4 teaspoon cardamom powder
  • 1/4 cup sliced dry fruits as per your choice

Preparation: 

  • Wash, peel and grate the bottle gourd.
  • Squeeze the grated bottle gourd/Lauki to remove water.
  • Boil the milk in a separate pan.

Method 1: 

  • Heat ghee in a pan on medium flame.
  • Add the bottle gourd and stir-fry for about 4-5 minutes.
  • Add the boiled milk and condensed milk and mix well.
  • cook on a simmer for 5-10 minutes until the milk is creamy, and make sure to stir it at regular intervals.
  • Reduce the heat and add the sugar, coconut powder, dry fruits and cardamom powder.
  • Cook for another about 2-3 minutes and turn off the heat.
  • Kheer is ready this can be served warm, at room temperature or cold.

Method 2: 

  • Heat the milk in a heavy bottom pan on medium flame for 3-4 minutes.
  • Add the condensed milk in milk and mix well.
  • Add the bottle gourd and coconut and mix well
  • Simmer this mixture for 10 to 15 minutes and make sure to stir it at regular intervals.
  • Add the sugar, cardamom powder and dry fruits mix well and cook till the sugar dissolves.
  • Kheer is ready this can be served warm at room temperature or chilled.

     Note: 

  • During this process of making kheer, you make sure to stir the kheer in regular intervals.
