Rice Kheer Recipe
Kheer is an Indian version of rice pudding. In this recipe rice cooked with the milk, sugar and flavored with nuts, cardamom, and saffron.


Rice Kheer can be served as Prasadam in Hindu Pooja, as sweet in festivals/ celebration and as dessert.

Rice Kheer Recipe

Ingredients:

  • 1-liter full-fat milk
  • ¼ cup basmati rice
  • Sugar to taste
  • 5-6 green cardamoms (hari elaichi)
  • A pinch of saffron (kesar)
  • 15-20 Almonds blanched and sliced (badam)
  • 15-20 pistachios blanched and sliced (pista)
  • 15-20 cashews (kaju)
  • 1-tablespoon raisins

Preparation:

  • Rinse the rice very well.
  • Then Soak the rice in sufficient water for half an hour (30 min).
  • In another bowl take some hot water and, add the almonds and pistachios, cover the lid.
  • Let them cool down and the peel them.
  • Slice them along with the cashews, and keep aside.
  • Take the cardamoms in a mortar-pestle and then powder them finely, and keep aside.

Method:

  1. Heat the milk and allow it to come to a boil.
  2. In the meantime drain the rice and keep aside. 
  3. Add the rice in the milk in the medium flame.
  4. Mix well and simmer the flame and let the rice cook.
  5. Now add the sugar.
  6. Stir continuously after regular intervals.
  7. When the rice is almost ¾th done then add the almonds, cashews, cardamom powder, and saffron.
  8. Cook further till the rice is completely cooked and thicken.
  9. Switch off the flame and add the raisins and mix well.
  10. Serve the rice kheer hot or chilled.

Note:

  • The whole process of cooking the kheer takes approx 35-40 minutes on a low flame.
