Peanut Sundal Recipe

Ingredients:
- 1 cup Peanuts
- 1 tablespoon Ghee
- ½ teaspoon Mustard Seeds (small)
- Few Curry Leaves
- 1 Green chilli chopped (optional)
- 2 Red Chili broken into 2 pieces
- 2-3 tablespoon Grated coconut()
- Rock salt (Sendha namak) to taste
- 4 tablespoon grated green mango or to taste
Method: 1
- Soak the peanuts for 3 hours.
- Pressures cook it with salt and water just to immerse it for 3 - 4 whistles on medium flame.
- Allow the steam to escape using natural release method, (refer handy tip) before opening the lid.
- Drain and keep them aside.
- Heat the oil in a pan.
- Add the mustard seeds and when the seeds splutter.
- Add the curry leaves, broken red chillies, grated green mango,green chilli and salt to it and stir for a couple of seconds.
- Then add the boiled peanuts to this mixture and stir well.
- Remove from the flame, add the coconut and mix well.
- Serve immediately.
Method: 2
- Soak the peanuts for 3 hours.
- Heat the oil in a pressure cooker and add the mustard seeds.
- When the seeds crackle, add the red chilli, green chilli, curry leaves and grated green mango and sauté for a couple of seconds.
- Add the peanuts, salt and 1/2 cup of hot water and mix well and pressure cook on a medium flame for 3-4 whistles.
- Allow the steam to escape using natural release method, (refer handy tip) before opening the lid.
- Remove from the flame, add the coconut and mix well. Serve immediately.
