Ingredients:
- 4 medium tomatoes diced into quarters
- 1 medium carrot, peeled chopped(optional)
- 1/4 cup chopped celery(optional)
- 1-2 teaspoons of oil/butter
- 1 teaspoon garlic chopped
- 1 medium onion chopped
- Salt to taste
- 1/2 teaspoon sugar optional
- 1/4 teaspoon black pepper
- 1 Bay leaf
- 2-3 tablespoon Fresh cream
- 1 teaspoon cornstarch dissolved in 1/4 cup of water (optional you may skip this step)
- Bread croutons (optional)

Ingredients:
- 4 medium tomatoes diced into quarters
- 1 medium carrot, peeled chopped(optional)
- 1/4 cup chopped celery(optional)
- 1-2 teaspoons of oil/butter
- 1 teaspoon garlic chopped
- 1 medium onion chopped
- Salt to taste
- 1/2 teaspoon sugar optional
- 1/4 teaspoon black pepper
- 1 Bay leaf
- 2-3 tablespoon Fresh cream
- 1 teaspoon cornstarch dissolved in 1/4 cup of water (optional you may skip this step)
- Bread croutons (optional)
Method:
- Heat 2 teaspoons of butter in a pan over medium heat.
- Add the bay leaf and sauté for a second.
- Add the garlic and sauté for about 30 seconds on a low flame.
- Add the chopped onion and sauté till the onions become translucent.
- Add carrots and stir-fry for 2 minutes.
- Add the tomatoes, celery, salt, 1 cup water and pepper and cook until tomatoes become mushy.
- Let them cool down and take out the bay leaf, then puree in the blender.
- Strain this puree through a metal strainer to remove the seeds.
- Heat the saucepan.
- Add the tomato pure and`1.5 cups of water (adjust the water to your taste).
- Stir the cornstarch mixture and add it to the soup.
- Stir continuously to avoid the lump formation.
- Add sugar and mix well.
- Bring it to boil. When it comes to a rolling boil, turn the flame to low and cook for 5 minutes.
- Turn off the flame, add fresh cream and stirring continuously.
- Taste for salt, pepper and sugar at this step and adjust them to taste.
- Pour the steaming hot tomato soup in soup bowls and Serve hot.
- Tomato soup is ready to serve with bread croutons.
Note:
- Always use fresh ripe red tomatoes.
- Avoid using sour or unripe tomatoes.
- In this soup, there is a balance of tanginess from the tomatoes and sweetness from the sugar and cream so make sure that the soup does not become very sweet.
- You can skip the onions and carrot and corn starch in the soup if you prefer.
