Grilled Vegetable Sandwich |
Ingredients:
- 8 slices of Brown bread
- 3/4 cup onion
- 3/4 cup shredded cabbage
- 3/4 cup grated carrot
- 3/4 cup finely chopped bell pepper/capsicum(optional)
- 3/4 cup grated low fat paneer (cottage cheese)
- 1 green chilli, chopped(optional)
- 4 tablespoon mozzarella cheese
- Salt to taste
- 1 tablespoon low fat butter for cooking/greasing (optional)
Method:
- Mix all the ingredients Except Bread slices together.
- Divide the stuffing into 4 equal portions.
- Place one portion of the stuffing on one slice of bread. Top with another slice of bread.
- Repeat with the remaining ingredients to make 3 more sandwiches.
- Pre-heat the griller and grill the sandwiches, using a little low fat butter to cook.
- Halve the sandwiches and serve immediately.
- Serve hot.
