Puran Poli Recipe

Ingredients:
For The Dough:
- 2 cups whole wheat flour (gehun ka atta)
- 2 tablespoons oil or ghee
For The Filling:
- 1 cup Bengal gram (chana dal)
- 1 cup jaggery or to taste
- A few saffron (kesar) strands
- 2 tablespoon ghee
- 1/2 tsp cardamom (elaichi) powder
- Whole wheat flour (gehun ka atta) for rolling
- Ghee for smearing
For the dough:
- Combine the flour and oil or ghee in a bowl and knead into soft dough using enough water.
- Divide the dough into equal portions and Cover with a damp cloth and keep aside for one hour.
- Dissolve the saffron in a little water and keep aside for 15 to 20 minutes.
- Wash and boil chana dal with 11/2 cup of water and pressure cook it for 2-3 whistles.
- Allow the steam to escape before opening the lid mash the dal lightly using the back of the spoon.
- Heat the ghee in a broad pan.
- Add the dal, grated jaggery, saffron, cardamom powder and mix well.
- Cook on a medium flame for 15-20 minutes or till the mixture thicken while stirring continuously.
- It should resemble a soft ball.
- Remove and allow it cool slightly.
- Divide the stuffing into equal portions and roll into balls. Keep aside.
Method:
- Dust it with flour and Roll out one portion of the dough into 4-5”diameter circle.
- Place a portion of the filling in the center and fold the edges of the dough over the filling. Pinch the edges together to seal the filling in.
- Flatten the dough and roll again into a 4-6" diameter circle, using a little wheat flour for rolling.
- Cook on a tava (griddle) over a medium flame till it turns golden brown in colour on both the sides.
- Repeat with the remaining dough and filling to make Puran Polis.
- Smear a little ghee on each Puran Poli and serve hot with milk.
