Ingredients:
For spice powder or Podi:
- 2 tablespoon coriander seeds
- 2-3 whole dry red chillies
- 2 teaspoon sesame seeds
- 1/4 teaspoon fenugreek seeds
For tamarind rice:
- 1 tablespoon oil
- 1/2 tablespoon mustard seeds
- 1/4 cup peanut
- 1/2 teaspoon Chana Dal
- 1/2 teaspoon Urad Dal
- 1 string curry leaves
- Pinch of asafetida
- 1/4 teaspoon turmeric powder
- 1/4 cup tamarind (Imli) pulp
- Salt to taste
- 2-3 whole dry red chillies,whole or broken into pieces
- 2 cups cooked rice
Spice powder:
- Dry roast all the ingredients except sesame seeds until you get a nice aroma.
- Dry roast sesame seeds separately on a slow flame while stirring continuously.
- Grind all roasted ingredients and powder everything together.
- Our spice powder for puliyodharai is ready.
- Keep it aside.
Step 2:
Tamarind paste:
- Heat the oil in a broad pan, add mustard seeds, let it crackle.
- Add the peanuts and sauté on a low flame for a few minutes or till they turn light pink in colour while stirring continuously.
- Add chana dal, urad dal, curry leaves, asafetida and turmeric powder, mix well and sauté on a medium flame for a minute, while stirring continuously.
- Add tamarind pulp and salt, mix well and cook on a medium flame.
- Cook until oil separates from spices, switch off the flame.
- Now tamarind paste is ready.
Step 3:
How to mix tamarind paste, spice powder and rice:
- Allow the cooked rice to cool.
- Add spice powder, tamarind paste according to your taste and mix the rice gently.
- Tamarind rice is ready to be served.
Suggestion:
- You can adjust spice powder and tamarind paste according to your taste.
- You can store this paste in the refrigerator for a week and use it when required.
