Ingredients:- 

  • 6 medium size boiled Potatoes (aaloo)
  • ¼ cup Mint leaves (pudina)
  • ½ cup Cilantro leaves (dhaniya)
  • 1-2 chopped Green chillies
  • 1-2 tablespoon tamarind pulp/paste to taste (imli)
  • Chili powder to taste
  • ¼ teaspoon Turmeric (haldi )
  • Rock Salt to taste (sendha namak)
  • ½ teaspoon Cumin seeds (jeera)
  • 2-3 tablespoon clarified butter (ghee)

Preparation:  

  • Wash the potatoes thoroughly. Pressure cook in a vessel over water for 2 whistles.
  • Make sure that potatoes are cooked but not overcooked. Remove and peel the potatoes.
  • Cut the potatoes into dice pieces. Keep aside.  
  • Wash the mint, cilantro and chllli thoroughly.
  • Grind together the mint, cilantro and green chilies into a fine paste. Keep aside. 
 

Method:- 

  1.  In a heavy bottom broad pan heat the ghee.
  2. Add cumin and when it starts crackling add the chilli, cilantro and mint paste.
  3. Stir fry till it start giving a nice aroma.
  4. Now add Chilli Powder and turmeric powder in it and stir.
  5. Add the tamarind paste, mix well and cook for 2 minutes.
  6. Add the boiled potatoes and salt, mix well and cook for 3 to 4 minutes.
  7. Serve hot.
