Ingredients
- 1 cup Green Peas
- 1 tablespoon Ghee or unsalted butter
- 1 liters full fat Milk
- Sugar to taste
- pinch of saffron
- 1/2 teaspoon Green cardamom powder
- 1-2 tablespoon Raisins or as required
- cashew nuts and almonds sliced as required
Preparation:
- Boil the milk in a heavy-bottom deep pan over medium heat, till it reduces to half its original quantity while stirring constantly.
- Wash the green peas carefully.
- grind the green peas coarsely.
- Add saffron into milk and mix it well.
Method:
- Heat ghee in a Heavy bottom pan and allow it to melt.
- Add Green Peas into a pan and cook on low-medium flame. Keep stirring continuously.
- Cook for 5-8 minutes over medium flame, when ghee starts separating from the past.
- Add raisins, cashew nuts, and almonds into the roasted peas.
- Mix well and cook for 2-3 minutes.
- Reduce the flame and add the milk.
- Add saffron milk in the roasted green pea paste and cook.
- Add sugar and cardamom powder in kheer and cook for 2 more minutes.
- When kheer gets thick in consistency and is ready.
- Turn off the flame and serve kheer in a bowl.

- You can use any dairy-free milk instead of full-fat milk to make it dairy-free version.
