Poha is a very popular breakfast, especially in Maharashtra and western states of India. You can add any veggies into it according to the to taste and availability. Kanda poha is one of the quick breakfast recipe made with onion and flattened rice red or white.

Ingredients:
- 2 cups thick(mota) poha
- 2 tablespoons oil
- 2 tablespoon peanuts
- Pinch of asafoetida
- 1/2 teaspoon sugar, optional
- 1/2 teaspoon black mustard
- 1 medium size chopped onion
- 1 string curry leaves
- 1-2 green chilli chopped to taste
- 1/2 teaspoon turmeric powder
- 1.5 teaspoon lemon juice
- 1 tablespoon chopped cilantro(hara dhania)
Method:
- Place the poha in a strainer and wash it under cold water then keep aside to drain out the excess water.
- Sprinkle salt and sugar over it, mix well and keep aside.
- Heat 2 tablespoon oil in a frying pan over medium-high heat.
- When oil is moderately hot add mustard seeds when they start to splutter add asafoetida, curry leaf green chilli and peanuts.
- Sauté on medium heat until green chillies turn crisp.
- Add chopped onion and saute until onion turns translucent.
- Add turmeric powder and mix well.
- Add soaked poha, mix well and cook for 3- 4 minutes.
- (If the poha looks too dry, add a few tablespoons of water and continue cooking).
- Remove from heat and add lemon juice mix well and cover for few minutes.
- Garnish with finely chopped coriander and serve.
